What is Matcha?
Matcha first appeared in China during the Tang Dynasty in the 8th Century. It was during the 12th Century that the matcha we know today was introduced to Japan by a Buddhist Monk. During his time in China, he discovered that the beverage helped improve his Zen meditation by producing a calm, alert state. These benefits would make Matcha the basis for the Japanese Tea Ceremony, Chado.
Like green tea, matcha comes from the same plant, Camellia Sinensis, a species of evergreen. The difference comes in how they are prepared and harvested. Around 20 to 30 days before harvest, the leaves are shaded to avoid direct sunlight. Keeping the plants in darkness causes an increase in chlorophyll production, boosting the amino acids that give the plant a darker green hue, distinct aroma, and sweet taste profile.
When the time comes for harvest, the tea leaves are picked by hand and then steamed to preserve their rich color and nutrients. The steamed leaves are then dried, the stems and veins are removed, and the leaves are ground to a fine powder.
