What is Oolong Tea?

Oolong is a traditional Chinese tea derived from the Camellia Sinensis, the same plant we get green and black tea; the difference comes from the oxidation process.

Oolong tea tree leaves are wilted in the sun and bruised to create partial oxidation. The oxidation process is brought to a stop by pan-roasting the leaves. Knowing how long to roast the leaves takes a high level of skill and experience. The combination of oxidation and roasting varies from batch to batch.
